Purslane..A Herb Or Weed? We Do Know It's Full Of Antioxidants!
What is Purslane (Portulaca oleracea)? More to the point...how good is it for you?
Very good indeed!! Some people say it is a weed, some say it is a herb. Who really cares? What we really care about is how healthy and beneficial it is? First, we can thank two biochemists, Norman Salem, Jr., and Artemis Simopoulos. They actually discovered that it is the richest leafy-plant source of omega-3 fatty acids. In fact pur slane contains a strong
antioxidant
called n-3 fatty acid, which has been shown in many many studies, to help fight against heart disease,
cancer,
and other diseases.
It get's better...a serving of this amazing herb (weed?) delivers only about 15 calories. A great slimming herb!! It is also a great a source of
vitamin E,
vitamin C
and vitamin A. How do you eat it? Simply eat it in salads, or cook it in stews, soups or vegetable dishes. It is a great complement to any type of Greek salad that includes olive oil and feta cheese. The Mexicans traditionally add it to eggs and omelets. So, as you can see it is a very versatile plant. Mosy of us probably pull it out of out of the ground by the handfuls, without really thinking...well next time spare a thought for this 'weed'. Maybe even grow some yourself.
